Mince pies

Place 375g plain flour and 260g softened unsalted butter in a bowl and rub together to a crumb consistency.

Add 125g caster sugar and 1 large beaten egg, and mix together.

Tip out onto a lightly floured surface and fold until the pastry comes together, be careful not to over mix.

Wrap the pastry in cling film and chill for 10 mins.

Using a round cutter (about 10cm), cut out bases and place them into muffin trays. Put 1½ tbsp mincemeat mixture into each. 

Bake the mince pies for 15-20 mins until golden brown. Leave to cool before releasing them from the muffin trays and dusting with sugar 

Brownies with matcha and white chocolate

Matcha brownies 

In a large bowl, combine dry ingredients (flour, sugar and matcha powder). Using sifter or whisk, mix until fully combined and matcha powder is evenly incorporated.

Add melted butter, eggs and vanilla. Beat with hand mixer until fully combined.

Break chocolate into chunks and add to the mixture 

Using spatula, transfer batter into parchment lined cake pan.
Once all your batter is in the pan, using a spoon or spatula, lightly flatten out your matcha brownie batter so that the surface is level.

Cook on 350°F for approximately 35-40 minutes or until full cooked. 

Once cooled, slice and serve or refrigerate overnight to set fully and serve the following day.

Keto Dark Chocolate Brownies 

Preheat your oven to 180 Celsius / 356 Fahrenheit

Melt the butter and dark chocolate in a pan or in a bowl over boiling water 

Let the chocolate and butter cool. 
Meanwhile, combine the eggs, flour, cocoa powder and sweetener in a bowl. 

Add the butter and chocolate in with the other ingredients once cooled 

Line a rectangular baking tin or small casserole dish with baking / parchment paper. Cut the paper to size so that it covers the bottom and two sides of the dish. Grease the two remaining sides. 
Fill the batter into the dish and smoothen the top. Bake 25 minutes or until the top is firm. 

Top with any additional items such as chocolate chips, pecans, marshmallows, chocolate chunks etc!

Let the brownies cool before you remove them from the baking tin. They will be VERY soft when warm, but firm up as they cool down.

Boil the rice for 20 minutes until water is absorbed 

Cut the radish and cucumber into thin slices and add to the boil after 10 minutes

Mix together the soy sauce, gochujung paste, cider vinegar and sesame seeds into a bowl to make the sauce .

Put the rice and veg into a bowl once ready and sprinkle with spring onions. Adding some ginger and soy is optional. Apply the sauce as required and mix in.

Fluffy American Pancakes

Combine the sugar, flour, baking soda and salt in a bowl

Melt the butter and combine with the milk, whisk in the egg

Combine the wet and dry ingredients and mix until smooth batter is formed

Heat additional butter in a frying pan on low heat

Once the pan has warmed begin frying the pancakes.

Optional: serve with maple syrup, blueberries and bacon

Use the separate recipe to prepare the pie crust and place in pie dish ready 

Combine together the butter and sugar until fluffy 

Whisk the eggs separately and then add to the mixture 

Add the syrups and vanilla and mix until combine 

Lastly add in the pecans ensuring they have been halved beforehand 

Preheat the oven to 190c fan and bake for 35 mins - 1 hour. 

The pie will still seem somewhat wobbly but remove from the oven once the pecans are golden cooked. 

Leave to set for 4-8 hours.

Healthy Cinnamon Buns

In a small bowl, combine the mashed banana, avocado oil, and maple syrup and mix. Then add the dry ingredients: oat flour, salt, baking powder, and flaxseed meal until a dough forms.

In a small bowl, mix together the sugar and cinnamon. Roll out the dough and brush with more avocado oil, and then sprinkle on the cinnamon sugar. Cut the dough into four equal strips and start rolling. You can either make 4 separate rolls, or combine them all together (which is what I did) to make a large roll.

Bake the roll at 170c for about 10 minutes. If you want to add icing, just mix powdered sugar and oat milk!

Pumpkin Pie

You will need to use the separate pie crust recipe to prepare the pie crust 

Combine together the ingredients in a bowl, adding the milk last gradually 

Pour the mixture into the pie crust in the dish and bake for 40 minutes or until cooked. (The pie may still seem ‘wet’ when cooked, it will need to set for a few hours until firm)

Iced Cinnamon Buns

Put the flour and salt in a bowl with the soft butter. Rub together for 5 minutes, or until there are no lumps and the mixture resembles fine breadcrumbs.

Gently heat the milk on the hob until lukewarm, and add the flour mixture.

Add the yeast and caster sugar, mix until a dough is formed, then knead for 5 minutes on a lightly floured surface.

Put the dough into a clean bowl, cover with cling-film and leave somewhere warm until the dough has doubled in size - this typically takes 60-90 minutes.

Push the risen dough down in the bowl to remove the air. Roll out into a rectangle, roughly 40cm long and 25cm wide.

Spread the very soft (but not melted) butter even over the dough. Ensuring there are no lumps of sugar, sprinkle the muscovado sugar and cinnamon mix over the buttered dough.

Roll the dough up lengthways like a Swiss roll. Use a sharp knife to cut into 12-14 slices.

Grease the baking tins and gently arrange 6-7 slices in each tin, flattest side down.

Cover the tins and leave to rise again in a warm place for 20-30 minutes. Preheat the oven to 180 degrees Celsius (160 degrees Celsius fan assisted).

Brush the risen buns with a little milk. Put the tins in the preheated oven and bake for 15-18 minutes, or until the buns are golden brown.

While the buns are in the oven, make the icing by mixing 20 grams of soft butter with the icing sugar. Gradually add 2 tablespoons of milk and mix until the icing is thick but spreadable.

When the buns are out of the oven and still warm, spread as much icing as you like over the top. The finished iced cinnamon swirls are tasty cold, but best eaten while still warm.

Mix together all ingredients and leave to set for 10 minutes

Pour mixture into muffin cases, mixture makes approx 6 muffins or 8-10 small muffins

Mix together the flour, icing sugar and the cold butter and 1 egg until a dough is formed. Can add 2 tbsp water if needed. Wrap the dough in cling film and chill for 30 minutes 

Roll out the dough and lime in the pie dish then cover with foil and chill again for another 15 minutes 

Keep the pastry covered with the foil and bake at 160c for 10-15 minutes until golden 

Mix together the softened butter, sugar, 3 eggs, ground almonds and almond extract to make the filling 

Once the pastry has cooled, spread into the base the jam, then add the filling mixture on top 

Add the flakes almonds on top and then bake for 30-40 minutes or until cooked. The center may feel soft however this will firm up after some time. You can also set it in the fridge for a couple of hours 

Additionally you can sprinkle some extra icing sugar on top, and serve cold or reheat to serve warm

Mac and cheese bake 

Boil the pasta for 2 mins less than stated on the pack, then drain. Meanwhile, melt the butter in a saucepan. Add the garlic and English mustard powder, cook for 1 min, then stir in the plain flour.

Cook for 1 min more, then gradually whisk in the milk until you have a lump-free sauce. Simmer for 5 mins, whisking all the time until thickened. Take off the heat, then stir in the cheddar and half the parmesan.

Stir the pasta and some seasoning into the cheesy sauce. Tip into a large ovenproof dish

Top with extra Parmesan and bake for 20 minutes. Serve with garlic bread and salad or fried chicken with Sriracha hot sauce for a spicier kick. (recipe serves four portions)

Add in water gradually and stir to a dough

Add pizza toppings of choice then cook for 5-10 minutes, serve with olive oil 

Korean BBQ beef, bulgogi, is very easy to make at home with a few basic ingredients, and the thinly sliced beef doesn’t take long to marinate.

Cut the sirloin steak into separate slices. Remove any excess blood from the pre-sliced meat using paper towels.

Mix the soy sauce, water, sugar, mirin, garlic, sesame oil, sesame seeds and pepper to form the marinade.

Place the meat and vegetables in a large bowl. Add the marinade and toss gently to combine everything well. Marinate the meat for 30 minutes to an hour, up to overnight. 

Preheat the pan, and add the meat over high meat. You can crowd the pan to generate some liquid and let the meat cook in its own juice. Cook until the meat is no longer pink. Use all the marinade if you want some sauce at the end.

Combine the salt, flour and butter in a bowl 

Gradually add the water tablespoon at a time until the mixture forms a dough that sticks together 

Lightly dust a surface with flour and roll the dough as needed and transfer to a greased pie dish

Combine together flour, salt, yeast and olive oil. Gradually add the water and mix until a dough is formed. Leave for 15 minutes for yeast to activate. 

Cut the olives in half and fold into the mixture, add as many as you may like. 

Fold in the olives and cover the dough in a bowl for 1 hour. 

Grease a tray, shape the dough into a loaf and place on the tray. Dust the dough with a sprinkle of flour.

Once oven is heated to 200c, place the bread in the centre of the oven and bake for 30 minutes or until crisp.

First make the tomato sauce. Heat the oil in a large pan and fry the garlic for 1 min. Add the sugar, tomatoes and some seasoning and simmer for 20 mins, stirring occasionally, until thick. Add the basil and spread the sauce across the base of a oven dish

Make a sauce by beating the mascarpone with the milk until smooth, season, then set aside.
