Steps
Step 1
Mix all ingredients together in blender/mixer
Step 2
Let the pancake batter rest for 10 minutes so the oats can hydrate. This is the key to light and fluffy pancakes! In the meanwhile, chop/prepare fruit topping of choice such as strawberries, blueberries and banana
Step 3
Heat the pan, use small amount of coconut oil/olive oil
Step 4
Fry 2 medium pancakes or 4 small pancakes (recipe serves 1)
Step 5
Top pancakes with maple syrup and fruit
