Step 1
Preheat the oven to 180c fan
Step 2
Combine the flour and baking soda in a bowl
Step 3
In a jug, combine the melted coconut oil (warm not hot) with the coconut milk, vanilla extract and eggs. Whisk until smooth
Step 4
Combine the wet ingredients to the bowl of dry ingredients and mix until mixture is smooth
Step 5
Add in the sugar and mix in.
Step 6
Stir in the blueberries
Step 7
Fill 12 muffin cases with mixture evenly
Step 8
Bake for 25-35 minutes or until skewer inserted into muffins comes out clean
Step 9
Can be served with maple syrup, peanut butter and additional fruit
