Steps
Step 1
Pre-heat the oven and oil a tray. Bake sweet potato chunks for 20-25 mins
Step 2
Meanwhile boil rice with cucumber and leek for 20 mins
Step 3
In a serving bowl, add the chopped peppers
Step 4
Meanwhile prepare the sauce: Mix together gochung paste, honey, sesame oil, seeds and peanut butter. (Can melt the peanut butter first in microwave if needed)
Step 5
Add the halved cherry tomato’s and sweet potato to the sauce and mix together.
Step 6
When rice/cucumber/leek is cooked, add to the bowl with the pepper
Step 7
Finally add the sauce/tomato/potato to the top of the rice bowl.
Step 8
Finish by adding sliced spring onion and coriander to the top of the bowl.
